Just finished doing a power supply mod on a new MacMini.
It is running on 12Volts and is unbelievably fast.

I used my old Carnetix 2140, all I had to do was change it's primary output voltage to 12V from the old Mini setting of 18V.
That is awesome. I have last years mini which will be easy enough to convert. What do you use for a monitor?
I used an Argonaut monitor in the cockpit, the exact model of which is no longer available. The replacement is here:

There is a second monitor at the nav station down below. I used a cheap ViewSonics, here:

You should not have to modify your Mini other than butchering the power supply cable. The Carnetix devices have selectable output voltages, the old Mini wants 18.5.

I assume, then, that you hardwired the ViewSonic into your Carnetix, per your Panbo post. Most of them have a power supply box, which was not needed and you hard lined 12 volt directly into the montor?

Only the Mid 2010 (and later) have an integrated power supply.
