I'd welcome thoughts on the choice between using BT or wi-fi to get data from an NMEA network onto an iPad. For example, the Shipmodul MiniPlex-2USB/BT or MiniPlex-2Wi (There are likely other choices than those).

You cannot use BT for NMEA data so far. Someone would have to make an iPad compatible BT multiplexer. So far none. No reason it can't be done.
