Is it possible via bluetooth or wifi with instruments interfaced to MacBook (in either NavX or ENC) to then interface with Iphone for handheld instrumentation in cockpit?

Yes via MacENC..

MacENC can repeat all GPS, Instruments, AIS NMEA data to TCP/IP which can be received with iNavX.

Thanks, and just to confirm, it won't work with GPS NavX? (We already use NavX on the boat). Are any credits available to upgrade to MacEnc from NavX?

No as running both the iPhone GPS and the WiFi radio at the same time for will drain the iPhone battery down rapidly. Besides USB GPS for Mac are very inexpensive. So little value to use an iPhone as a GPS receiver for a Mac.
